F&B manager
An F&B (food and beverage) manager runs a hotel’s food and drink operations: restaurants, bars, room service, breakfast and events, including staff, menus, costs and revenue.

The F&B manager works with the head chef on menus and pricing, controls food and beverage costs, leads waiting and bar teams, and is responsible for the department’s revenue and profit. In larger hotels they report to the hotel manager and oversee outlet managers and a banqueting team.
How it works in practice
Example: the F&B manager at a 120-room hotel notices that room service sells poorly after 9 pm even though the kitchen is open until 11 pm. They cut the late menu to dishes that can be prepared quickly, let guests order from their phones and review sales each week.
